Crab, Tomato & Herb Salad
I have to give a shout out to Mr. Wine Box Gardener for this recipe. He found a great way to use my garden goods at their peak and use some delicious seafood from our local fish monger, Freeman's Fish Market. This refreshing salad is great by itself or as a sandwich. This salad has impressive freshness and flavor, while being one of the easiest salads you'll ever make.
The basis of the salad is lump crab meat, which was mixed with herbs and tomatoes from my garden as well as using some of the pesto I made from garden basil last year. (Yes, it's still delicious!) We both felt that the pesto was optional, and the sandwich would have been great without it, but liked the contrasting flavors with it on the sandwich. The one ingredient that added amazing freshness was the cilantro. It stood out without overpowering the other flavors.

Prep Time: 20 minutes
Yield: Serves 6
1 pound of lump crab meat
1/3 chopped fresh cilantro
1/8 cup chopped fresh parsley
1 pint cherry tomatoes, halved
1/3 cup mayonnaise
Salt & pepper to taste
Pesto & Fresh Rolls (optional and only needed if making as a sandwich)
- In a large bowl, mix the first 5 ingredients together. Add salt and pepper to taste.
- If making a sandwich, spread pesto on the roll before adding the salad.
You can alter the amount of mayonnaise used based on how creamy you want the salad, so start with less than you think you want and add from there.
